For virus data, release dates are published by Sophos. See http://openforum.sophos.com/t5/Sophos-Anti-Virus-for-Mac-Home/Auto-Update/m-p/385#M295

 

For forthcoming versions of the software/engine etc., I doubt that you will find schedules.
